  • 1 cup brown lentils
  • 1 bunch green spinach
  • 1 bunch green chard
  • salt
  • black pepper
  • 2 dried onions
  • lemon juice
  • 3 garlic cloves, minced
  • finely chopped fresh parsley
  • 1 cup flour
  • 1 cup fine bulgur
  • hot chili pepper to taste

Method

  1. Boil the lentils until nearly tender. Before the lentils finish cooking, add the washed, chopped Swiss chard and spinach.
  2. Add salt and spices to taste and let them simmer over low heat.
  3. Meanwhile, soak the bulgur by wetting it with water until it becomes soft. Mix the bulgur with the flour and one of the onions finely chopped, parsley, garlic, salt, spices, and hot pepper. Shape the mixture into rounds or balls and add them on top of the lentil mixture.
  4. Separately, fry the second chopped onion in a little vegetable oil. When it turns golden, add it on top of the lentil mixture as well. Finally, add the lemon juice.
