Ingredients
- 3 1/2 cups all-purpose flour
- 1 tablespoon dry yeast
- 1 tablespoon powdered milk
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup plain yogurt
- 1/2 cup vegetable oil
- 1/2 cup warm water
- Filling:
- 1 cup feta cheese or Kiri (or other soft white cheese), mashed
- 1/4 cup parsley, chopped
- 1 egg white
- a small pinch ground cinnamon
- For the topping:
- 1 egg yolk
- 1/4 cup milk
- 1/4 teaspoon vinegar
- sesame seeds and nigella (black cumin) seeds for garnish
Method
- In a deep bowl or in a stand mixer, combine all the dry ingredients and mix by hand. Then add the yogurt and oil and mix.
- Add the warm water gradually and knead well until you have a cohesive, smooth dough.
- Cover the dough with plastic wrap and let it rest for about 30 minutes.Timers: 30 min
- After resting, divide the dough into medium-sized balls. Mash the cheese and mix the filling ingredients well.
- Fill each dough ball with filling, seal to form a smooth ball, and arrange them next to each other in a baking tray lightly greased with oil.
- Brush the tops with the egg yolk, vinegar and milk mixture using a pastry brush to give a shine and help browning.
- Sprinkle with sesame and nigella seeds.
- Bake in a preheated oven (top and bottom heat) at 200°C (392°F) for about 12 minutes or until the honeycomb pastry turns golden.Timers: 12 min
- Serve the honeycomb pastry warm; it can also be served at room temperature.
