Jerusalem-style Palestinian hummus with tahini... a homemade recipe made the traditional way from the heart of Jerusalem :) One of our tastiest heritage recipes, whatever its origin, all of them fall under the umbrella of authentic Arab culinary heritage.

Ingredients

  • 1 kilo chickpeas, soaked overnight and boiled
  • half a cup chopped parsley
  • three cloves garlic
  • 1 cup tahini
  • 1 cup lemon juice
  • salt to taste
  • 10 ice cubes
  • Also from Kholoud, here is fatteh

Method

  1. Put all the ingredients in a Moulinex food processor and blend, or process continuously for half an hour.
  2. While blending in the electric machine, add the ten ice cubes in batches and keep blending until the hummus is completely smooth.
  3. Divide the hummus into serving plates and serve with olive oil or fried minced meat on top.
