Jerusalem-style Palestinian hummus with tahini... a homemade recipe made the traditional way from the heart of Jerusalem :) One of our tastiest heritage recipes, whatever its origin, all of them fall under the umbrella of authentic Arab culinary heritage.
Ingredients
- 1 kilo chickpeas, soaked overnight and boiled
- half a cup chopped parsley
- three cloves garlic
- 1 cup tahini
- 1 cup lemon juice
- salt to taste
- 10 ice cubes

Method
- Put all the ingredients in a Moulinex food processor and blend, or process continuously for half an hour.
- While blending in the electric machine, add the ten ice cubes in batches and keep blending until the hummus is completely smooth.
- Divide the hummus into serving plates and serve with olive oil or fried minced meat on top.
