Italian-style pizza — made the authentic way

Ingredients

  • Dough:
  • 6 cups sifted white flour or 1 kilogram
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon Italian seasoning
  • +
  • Oregano or dried thyme
  • Basil
  • or
  • Herb chicken bouillon cube (if available, use it instead of the salt, herbs and pizza spices)
  • Warm water as needed for the dough
  • 1 tablespoon yeast
  • 1/4 cup olive oil
  • Grated mozzarella for topping
  • White pizza sauce:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 1 cup milk
  • Herbs such as rosemary, basil and dried thyme
  • Chicken breast or shrimp - optional
  • 2 cups green or frozen spinach - optional
  • Salt
  • Red pizza sauce:
  • 2 garlic cloves
  • Peeled and crushed tomatoes
  • Olive oil
  • Pizza seasoning
  • Italian seasoning

Method

  1. Knead all the dough ingredients well for at least 10 minutes.. It is very important to knead for a sufficient time for the dough to succeed..
    Timers: 10 min
  2. Place the pizza dough in a bowl greased with oil and let it ferment well for at least 6 hours
    Timers: 360 min
  3. When it has risen.. sprinkle flour on a clean surface and stretch it by hand, not with a rolling pin or dough roller
  4. Sprinkle a little semolina and flour on the bottom of the tray to get a crispy crust.. and necessarily without oil
  5. Place the dough on the tray and spread the white or red sauce as desired.. then the cheese on top and put it in the oven until cooked
  6. Lightly sauté the herbs in oil with butter
  7. Add the crushed garlic and stir just a little
  8. Add the flour and stir
  9. Add the milk with quick circular stirring
  10. When the sauce thickens, remove it from the heat
  11. Add the garlic to the olive oil
  12. Stir until the garlic softens
  13. Add the crushed tomatoes and basil and stir until the mixture thickens
  14. Add the spices and salt and stir
