Italian-style pizza — made the authentic way
Ingredients
- Dough:
- 6 cups sifted white flour or 1 kilogram
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 tablespoon Italian seasoning
- +
- Oregano or dried thyme
- Basil
- or
- Herb chicken bouillon cube (if available, use it instead of the salt, herbs and pizza spices)
- Warm water as needed for the dough
- 1 tablespoon yeast
- 1/4 cup olive oil
- Grated mozzarella for topping
- White pizza sauce:
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 tablespoons flour
- 1 cup milk
- Herbs such as rosemary, basil and dried thyme
- Chicken breast or shrimp - optional
- 2 cups green or frozen spinach - optional
- Salt
- Red pizza sauce:
- 2 garlic cloves
- Peeled and crushed tomatoes
- Olive oil
- Pizza seasoning
- Italian seasoning

Method
- Knead all the dough ingredients well for at least 10 minutes.. It is very important to knead for a sufficient time for the dough to succeed..Timers: 10 min
- Place the pizza dough in a bowl greased with oil and let it ferment well for at least 6 hoursTimers: 360 min
- When it has risen.. sprinkle flour on a clean surface and stretch it by hand, not with a rolling pin or dough roller
- Sprinkle a little semolina and flour on the bottom of the tray to get a crispy crust.. and necessarily without oil
- Place the dough on the tray and spread the white or red sauce as desired.. then the cheese on top and put it in the oven until cooked
- Lightly sauté the herbs in oil with butter
- Add the crushed garlic and stir just a little
- Add the flour and stir
- Add the milk with quick circular stirring
- When the sauce thickens, remove it from the heat
- Add the garlic to the olive oil
- Stir until the garlic softens
- Add the crushed tomatoes and basil and stir until the mixture thickens
