Ingredients

  • 4 eggs
  • 120 g flour (or 1 cup + 1 tablespoon)
  • 120 g sugar (or 1/2 cup + 1 tablespoon)
  • 1 teaspoon vanilla
  • Lemon zest
  • Cotton candy, fruits and pistachios for decoration
  • Strawberry jam to spread on the tart base

Method

  1. Start by preparing the tart batter. Beat the eggs in an electric mixer with the vanilla, add the sugar in batches and beat for about 10 minutes until you get a thick, airy foam.
    Timers: 10 min
  2. Sift the flour and fold it into the egg mixture, add the lemon zest, and fold gently from bottom to top with a spatula so the batter does not deflate.
  3. Pour the tart batter into a buttered tart pan with a light dusting of flour.
  4. Bake in the oven for about 40 minutes (or a little longer depending on your oven) at 160°C.

  5. When the tart is baked, remove the pan from the oven and immediately invert it onto a wire rack.
  6. Let the tart cool completely before filling and decorating.
  7. Spread the cooled tart with strawberry jam, add a layer of vanilla ice cream, and decorate with pistachios, strawberries and cotton candy.
