Ingredients
- 4 eggs
- 120 g flour (or 1 cup + 1 tablespoon)
- 120 g sugar (or 1/2 cup + 1 tablespoon)
- 1 teaspoon vanilla
- Lemon zest
- Cotton candy, fruits and pistachios for decoration
- Strawberry jam to spread on the tart base
- Vanilla ice cream for the filling

Method
- Start by preparing the tart batter. Beat the eggs in an electric mixer with the vanilla, add the sugar in batches and beat for about 10 minutes until you get a thick, airy foam.Timers: 10 min
- Sift the flour and fold it into the egg mixture, add the lemon zest, and fold gently from bottom to top with a spatula so the batter does not deflate.
- Pour the tart batter into a buttered tart pan with a light dusting of flour.
- Bake in the oven for about 40 minutes (or a little longer depending on your oven) at 160°C.Timers: 40 min
- When the tart is baked, remove the pan from the oven and immediately invert it onto a wire rack.
- Let the tart cool completely before filling and decorating.
- Spread the cooled tart with strawberry jam, add a layer of vanilla ice cream, and decorate with pistachios, strawberries and cotton candy.
