  • 6 chicken pieces
  • 5 cups basmati rice
  • 5 tomatoes, chopped
  • 1 cup yogurt
  • 1 teaspoon chopped fresh cilantro
  • Hot red chili pepper
  • 1 teaspoon sweet red paprika
  • 1 teaspoon cumin
  • 5 onions, chopped
  • 1/2 teaspoon black peppercorns
  • 2 bay leaves
  • 4 sticks or whole cloves
  • 3 cardamom pods
  • 1 chicken stock cube
  • 10 cups boiling water
  • 1 cup vegetable oil
  • 8 cloves garlic, crushed
  • 1/4 teaspoon saffron
  • 1 teaspoon ready-made garam masala

Method

  1. In a medium-sized pot over medium heat, heat the oil, then add the onion and garlic and stir until they soften.
  2. Add the hot red pepper, paprika, cumin, black pepper, garam masala, salt, bay leaves, coriander, cloves, cardamom pods, chicken bouillon cube, and tomatoes. Stir well until the ingredients are combined.
  3. Add the chicken pieces and yogurt, reduce the heat, then leave the mixture for about 45 minutes until the chicken is well cooked.

  4. Then add the rice and pour in the water. Stir gently until combined, then let the mixture come to a boil.
  5. Lower the heat, cover the pot, and leave the mixture for about 35 minutes until the rice is cooked.

  6. Dissolve the saffron in a little water, then add it over the biryani mixture. Stir gently, then serve the biryani rice immediately while hot.
