- Beef shank or any bone-in meat
- 3 cups freekeh, washed and soaked in lukewarm water for 20 minutes
- 2 dry onions, finely chopped
- 6 cups beef broth or plain water, as desired
- Half a cup of vermicelli
- Nuts for garnish

Method
- Begin by preparing the meat: place a large pot on the heat and add two onions with cardamom pods, bay leaves, a spoonful of dried coriander, black pepper, salt, cinnamon sticks, whole cloves, and meat spices.
- Add enough water to cover the meat and cook over heat for 3 hours or until very tender.Timers: 180 min
- After the meat is cooked, drain it from the broth and roast it in the oven for 10 minutes, then set aside.Timers: 10 min
- In a pot over heat, add two tablespoons of vegetable oil with the vermicelli and stir until golden.
- Add the washed and soaked freekeh with a pinch of salt and cover with water.
- For every cup of freekeh, use 2 cups of water.
- After it boils, reduce the heat for half an hour, then turn off the heat.
- On a serving platter, place the freekeh and top with the boiled and roasted meat pieces, then garnish with fried nuts as desired.
