Vegan or fasting potato patties. An old Syrian recipe especially suited to times of abstaining from meat and dairy products
Ingredients
- 3 boiled potatoes
- 1 cup fine bulgur
- 1 teaspoon salt
- A pinch of black pepper
- 1/2 teaspoon cumin
- Mashed garlic
- Olive oil
- 2 tablespoons chopped parsley
- A pinch of red paprika
Method
- Soak the bulgur for half an hour in cold water
- Drain the bulgur well, then add the salt, cumin, and a pinch of black pepper
- Peel the potatoes and mash them well, then add them to the bulgur and knead
- Shape the potato dough into balls, then form them into patties and bake the patties on a tray greased with olive oil
- Once the potato patties are browned, remove them from the oven and brush them with a mixture of parsley, garlic, and olive oil, then serve
