Ingredients
- 1 cup Egyptian rice, cooked and chilled (so the heat doesn't make the tuna spoil)
- 1 can tuna, well drained of oil
- 1 small onion, finely chopped
- A pinch of grated carrot
- A pinch of grated cheddar cheese
- For coating
- Beaten eggs
- Crushed cornflakes

Method
- Mix the cold rice, tuna, and the rest of the ingredients, then knead until you get something like a dough
- Shape into small balls
- Dip the tuna balls in the beaten eggs, then in the crushed cornflakes
- Place the balls in the fridge for a while to chill so they firm up and don't fall apart when frying
- Fry them in plenty of hot oil and serve
