Ingredients
- 1 kg green beans
- 1 kg red tomatoes
- 2 medium yellow onions
- 1 small head garlic
- 2 tablespoons vegetable oil + 3 tablespoons olive oil
- Salt
- Black pepper
Method
- Wash the green beans well, then place them in a colander and cut them into small pieces
- Bring a pot of water to a boil and add the tomatoes to make peeling easier
- In a pot, heat the vegetable oil and sauté the onion and garlic until lightly golden
- Add the green beans and stir, then cover the pot
- Meanwhile, prepare the tomatoes while the beans cook a little
- Finely chop the peeled tomatoes and add them to the beans, then cook over medium heat until the sauce evaporates completely and the beans are cooked through
- Finally, add a pinch of black pepper and the olive oil, stir the beans a little, and turn off the heat
- Serve the loubiya cold or hot with white onion, cucumber, and hot peppers
