Ingredients

  • 1 kg green beans
  • 1 kg red tomatoes
  • 2 medium yellow onions
  • 1 small head garlic
  • 2 tablespoons vegetable oil + 3 tablespoons olive oil
  • Salt
  • Black pepper

Method

  1. Wash the green beans well, then place them in a colander and cut them into small pieces
  2. Bring a pot of water to a boil and add the tomatoes to make peeling easier
  3. In a pot, heat the vegetable oil and sauté the onion and garlic until lightly golden
  4. Add the green beans and stir, then cover the pot
  5. Meanwhile, prepare the tomatoes while the beans cook a little
  6. Finely chop the peeled tomatoes and add them to the beans, then cook over medium heat until the sauce evaporates completely and the beans are cooked through
  7. Finally, add a pinch of black pepper and the olive oil, stir the beans a little, and turn off the heat
  8. Serve the loubiya cold or hot with white onion, cucumber, and hot peppers
  9. Note: The secret to delicious loubiya is to let the sauce dry out completely so the beans absorb all the flavors
