Swiss chard with black-eyed peas is a delicious, easy, and beneficial vegetarian recipe for both adults and children.
Ingredients
- 1 bunch Swiss chard, leaves removed
- 1/2 cup thin black-eyed peas
- 1 bunch fresh coriander
- 4 cloves garlic
- Hot pepper, to taste
- 1 large onion
- Olive oil
Method
- Soak the black-eyed peas overnight.
- The next day, boil the peas until tender, then drain and set aside.
- Remove the Swiss chard leaves and use only the stalks.
- Remove the tip of each stalk with a knife and peel one side to remove the stringy fibers from the stalks.
- Cut the stalks into small pieces.
- Place water in a pot with a pinch of salt. When it boils, add the stalks and let them boil for about 15 minutes or until tender.Timers: 15 min
- Drain the stalks and rinse them with cold water to preserve their green color.
- Prepare the sautéed mixture: finely chop the coriander, onion, and garlic in a food processor until smooth.
- Sauté them in a pot with a little olive oil until softened.
- Add the Swiss chard and black-eyed peas and stir for only about 3 minutes. Add hot pepper to taste.Timers: 3 min
