Shish barak is a very delicious dish and truly suitable for this hot time of year. It is a light meal based on small dough dumplings stuffed with minced meat and cooked in yogurt. You can use goat's milk yogurt or cow's milk yogurt, depending on your preference.

Shish barak.. very delicious in summer, especially when served chilled

Ingredients

  • 1 kilo goat yogurt
  • 2 cups water
  • Fresh coriander
  • Garlic
  • Pine nuts for garnish
  • The dough:
  • 1 kilo flour
  • A pinch of salt
  • A pinch of sugar
  • 1/4 cup oil
  • 2 tablespoons powdered milk
  • Warm water as needed
  • The filling:
  • Finely minced meat
  • Chopped dried onion
  • Seven-spice blend
  • Salt
  • Oil

Method

  1. Mix the flour, salt, milk, oil, and sugar, then knead with warm water
  2. Let the dough rest aside
  3. Prepare the filling meanwhile: sauté the minced meat in a little oil
  4. When the meat has dried a bit, add the onion and stir
  5. Sprinkle the spices and salt and stir... leave the filling over low heat until cooked
  6. When the filling cools and is ready to use... roll out the dough on a clean surface with a dusting of flour
  7. Cut the dough into small circles
  8. Put a little filling in each one
  9. Seal the dough and place the dumplings on a tray until all are finished
  10. Put the goat's milk in the pot with water and stir
  11. When the milk boils, add the dumplings and stir gently; leave them on the heat until the dough is cooked... it will not take more than 15 minutes

  12. Fry a little crushed garlic and chopped cilantro in a bit of oil, then add them over the pot, stir and then turn off the heat
  13. Garnish the shish barak with fried pine nuts and serve hot or cold
