- 1 kg boneless fish, fried or grilled
- 2 cups long-grain rice, soaked
- 1 tablespoon ground cumin
- salt
- a pinch of sweet spice
- 3 medium onions
- vegetable oil
- tahini - tarator
- nuts for garnish
Method
- Chop the onions into small pieces or wedges and sauté them in oil until they turn golden.....
- Add a cup of warm water and let it simmer briefly to produce a brown broth.
- Place the soaked rice in the cooking pot and pour the onion broth over it... here you may, if you wish, add the broth along with all the onions, or use a sieve and add only the onion water.
- Add a spoonful of cumin, salt, and a portion of the fish, mix well and cover with water; for each cup of rice use 2 cups of water, and let them simmer over low heat until the mixture is cooked.
- Then prepare the serving platter and pour the rice, place the remaining chopped fish and the nuts on top, and serve Sayadiyah with tahini sauce or tarator, which is tahini thinned with a little water, lemon juice, and salt.
