Ingredients
- Onion
- Olive oil or vegetable oil
- Fresh (green) fava beans
- Salt
- Rice
Method
- Finely chop the onion, then sauté it in olive oil over heat until it browns.
- Add the fava beans and stir, then cover the pot and leave it on low heat until the beans soften and take on the onion's color.
- Add water and salt, using 1 1/2 to 2 cups of water for each cup of rice.
- Let them come to a brief boil over medium heat until the fava beans are well cooked.
- Add the rice. When the water with rice and beans boils again, cover the pot and leave it on low heat until the rice is cooked.
