  • 4 cups powdered sugar
  • 1 cup cornstarch
  • 3 cups water
  • 1 tablespoon mastic, ground with 1 tablespoon sugar
  • 1/4 cup rose water
  • 1/4 teaspoon citric acid or lemon salt
  • A pinch of salt

Method

  1. Put 2 cups of water and 2 cups of sugar in a saucepan and bring to a boil. After boiling, add a pinch of citric acid. Dissolve 1 cup of cornstarch in 1 cup of water, then gradually add the dissolved cornstarch to the mixture, stirring for 10 minutes.....

  2. Add the mastic and continue stirring. Add the rose water and the remaining sugar in batches, stirring for about 15 to 20 minutes while continuing to stir...

  3. Add a pinch of citric acid and add the pistachios...
  4. You can use whatever nuts you have on hand or whatever you prefer, but pistachios are best...
  5. Then place a little oil on special kitchen plastic wrap and wipe it over the wrap. Pour the mixture onto the wrap. Mix the mixture with a wooden spoon, shape it into a log, and roll it in the plastic wrap to get a nice shape...
  6. Let the Turkish delight roll cool for about 3 to 4 hours... Then remove the plastic wrap and coat it on all sides with powdered sugar and cornstarch, and cut it as desired..

  8. This recipe used pistachios and roasted cashews, but you can use only pistachios.
