How to Make Pistachio Turkish Delight

- 4 cups powdered sugar
- 1 cup cornstarch
- 3 cups water
- 1 tablespoon mastic, ground with 1 tablespoon sugar
- 1/4 cup rose water
- 1/4 teaspoon citric acid or lemon salt
- A pinch of salt
Method
- Put 2 cups of water and 2 cups of sugar in a saucepan and bring to a boil. After boiling, add a pinch of citric acid. Dissolve 1 cup of cornstarch in 1 cup of water, then gradually add the dissolved cornstarch to the mixture, stirring for 10 minutes.....Timers: 10 min
- Add the mastic and continue stirring. Add the rose water and the remaining sugar in batches, stirring for about 15 to 20 minutes while continuing to stir...Timers: 20 min
- Add a pinch of citric acid and add the pistachios...
- You can use whatever nuts you have on hand or whatever you prefer, but pistachios are best...
