How to Make Muftaqa
Muftaqa is one of the most popular traditional dishes from Beirut. This recipe shows you how to make muftaqa clearly and in the original style followed in the Lebanese capital, Beirut.
Ingredients

- 1 kilo Egyptian rice, washed and soaked for about two hours
- 1.5 kilos sugar
- 1 kilo tahini
- 6 tablespoons yellow curry spice (turmeric)
- 100 grams pine nuts
- Water
Method
Follow the cooking sequence without leaving the page.
- Put the rice on the heat with 10 cups of water and the yellow spice for 30 minutes, until it is well cooked...Timers: 30 min
- Add the sugar and tahini, and keep stirring without stopping until the fat or oil starts to appear from the ingredients, which is a sign that the muftaqa is nearly done.
- Add the pine nuts and continue stirring for another hour, until the mixture gathers into a ball in the pot or takes on a creamy, ointment-like texture... Pour it into serving dishes and spread it out as shown in the accompanying picture...
