- 2 cups chickpeas
- 1 cup peeled fava beans
- a bunch fresh cilantro
- 2 garlic cloves
- 1/4 bunch fresh green mint
- 1 medium red onion, dry
- 1 teaspoon ground cumin
- 1 teaspoon hot red pepper
- 1 small teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 tablespoon dried coriander powder
- 1 tablespoon black spice blend
- 1/2 tablespoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1/2 cup water
- Method for preparing the tarator:
Method
- Soak the chickpeas and fava beans overnight. The next day, drain the chickpeas and fava beans and grind them in a blender with half a cup of water, the fresh cilantro, garlic, onion, and mint until the mixture is smooth.
- Put the mixture in the refrigerator for ten minutes.. then add all the spices and mix well..
- Just before frying, add the bicarbonate and baking powder and mix well... Shape the falafel dough in the small metal falafel mold so the pieces take a round shape.. Fry the falafel balls in plenty of hot oil until they brown....
- Serve the falafel with tarator, pickles, and fresh vegetables like lettuce, mint, parsley, tomato, and cucumber, in addition to pickled hot peppers..
- Note: Falafel is very tasty when served as a sandwich in Arabic bread... place the falafel patties in the bread, distribute the vegetables on them, then sprinkle the tarator, roll the sandwich, and serve..
- Method for preparing the tarator:
- Mix two generous tablespoons of tahini with half a cup of water, a pinch of hot red pepper, salt, and the juice of half a lemon... Whisk well until the tarator becomes sauce-like....
