- 4 eggs, at room temperature
- 1 cup sugar
- 1 cup flour
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 70 g cornstarch — if you want a chocolate-flavored cake, split the amount between cornstarch and cocoa
- 4 tablespoons oil
- 4 tablespoons cold water
- Note: Because measurements in this recipe are precise, it is recommended to use a standard 150 g cup

Method
- Whip the eggs for 5 minutes, then place the bowl over a bain-marie on low heat, taking care not to boil the water.
- Continue whipping and add the sugar in stages, and continue whipping for about an additional 7 minutes until the eggs double in volume, then add the water while continuing to whip...
- Set the eggs aside until cool, then sift the flour with the cornstarch and baking powder; add the flour in several batches and fold gently from the bottom up until the dry ingredients are used up..
- Add the oil and stir..
- Preheat the oven for 5 minutes at 180°C. Line the pan with parchment paper and brush the paper with a little butter.. Pour the batter and place it in the oven on the rack above the middle for about 25 minutes...
- Turn off and then use the top heat for half a minute or until it browns slightly.. Remove the pan and leave it to cool, then invert it and gently peel off the parchment. Leave the cake until the next day..
- For decorating, cut the cake into two layers and moisten them with a little fruit juice or syrup, then fill with whipped dessert cream, wrap it and decorate as desired...
