Ingredients

  • 4 bunches of endive (alat)
  • 2 onions
  • 4 garlic cloves
  • Lemon, to taste
  • Salt

Method

  1. Clean the endive and wash it.
  2. Boil it, drain it, then squeeze it well and chop it with a knife — this method is easier than mincing before boiling.
  3. Slice the onion and fry it in olive oil until it takes a light golden color.
  4. Set aside a little of the fried onion for garnish and add the endive to the remaining onion, then toss.
  5. After a short sauté, add the garlic and lemon juice, stir, then turn off the heat.
  6. Garnish with the reserved onions and let it cool before serving.
