Fresh green molokhia... very tasty... when fresh molokhia is available, leave the dried one for later and enjoy the fresh flavor :)
Ingredients
- Fresh molokhia leaves
- Garlic
- Cilantro (coriander)
- Hot pepper
- Onion
- Chicken
- Aromatics/spices for boiling the chicken
Method
- Start by washing the fresh molokhia leaves thoroughly, then dry them well to remove excess water
- Put a little oil in a pot over the heat and sauté the leaves for just 2 minutes, stirring until they wilt slightlyTimers: 2 min
- Clean the chicken well, then boil it with the aromatics/spices
- When cooked, remove the chicken pieces from the pot and reserve the broth
- Place the molokhia leaves into the chicken broth and bring to a boil
- Fry the crushed garlic with the finely chopped fresh cilantro and chopped onion in a little oil, then pour this mixture over the boiling molokhia
- Add lemon juice and hot pepper after the molokhia leaves are cooked, add the deboned chicken pieces, and simmer the molokhia briefly
- Remove from the heat and serve with rice cooked with vermicelli
- Note: Do not cover the molokhia while cooking to preserve its green color
