- 1 kg chickpeas soaked in water overnight
- 500 g dried fava beans soaked in water for two days, changing soaking water several times
- 1 celery stalk
- a bunch parsley
- a bunch cilantro
- 1 head garlic about 6 cloves
- 2 potatoes
- 2 onions
- 1 tablespoon salt
- 1 teaspoon ground coriander
- 1 tablespoon falafel spice
- 1 teaspoon baking powder

Method
- Blend all the vegetables with the chickpeas and fava beans until smooth, then add the spices and salt.
- When it's time to shape and fry the falafel, add baking powder and sesame seeds.
- Let the mixture rest for about half an hour before shaping it into patties.
- Fry the falafel patties in plenty of vegetable oil.
- If you plan to freeze some of the falafel for later use, it is preferable not to add baking powder and sesame to the mixture.
- This quantity is large; you can prepare half the amount to get fewer falafel patties if desired.
- Serve the fried falafel as patties or in sandwiches with various fresh vegetables, turnip, pickles, and tartar sauce.
