Corn soup or corn chowder with chicken — light and delicious
Ingredients
- 1 large onion, finely chopped
- 2 tablespoons butter
- 1 tablespoon vegetable oil
- 2 cloves garlic, crushed
- 1 can corn
- 1 chicken breast
- 2 tablespoons flour
- 1 tablespoon chopped parsley
- A pinch each of nutmeg, white pepper, and black pepper
Method
- Boil the chicken, remove the bones, and cut into thin slices.
- In a pot over heat, sauté the chopped onion in the oil and butter until softened.
- Add the flour and a grating of nutmeg and stir, then add the can of corn (crush half the can in a food processor or blender and leave the other half whole).
- Stir, then begin adding the chicken stock while stirring well until the soup has a slightly thick (not overly thick) consistency.
- Add the thin slices of chicken, then the black and white pepper, and let it simmer for ten minutes.
- Finally add the chopped parsley and remove from heat.
- Note: For every tablespoon of flour, use one tablespoon of butter, adjusted to the total amount of soup. You can add more flour and butter if the batch is large.
