Method
- Mix the tomato paste, lemon juice, vegetable oil, paprika, garlic powder, and chicken seasoning, then add a little water. Coat the whole chicken with the marinade after sprinkling it with chicken seasoning and salt. Add the vegetables over the marinade as well. Choose small vegetables and leave them whole without cutting them.
- Place the chicken and vegetables in a baking tray and cover with aluminum foil, then place in the oven until the ingredients are cooked through. After that, remove the foil and brush the chicken with olive oil mixed with paprika, then brown the chicken on top.
- Serve the rice alongside the chicken with oven-baked vegetables.
- Rice method: In a pot over medium heat, add water with a little oil or ghee, a bay leaf, a cinnamon stick, cardamom pods, a pinch of white pepper, salt, and a chicken bouillon cube. When the water boils, add the peas and the soaked, drained rice. Let the rice cook until the water level is about even with the rice. Then sprinkle a little water mixed with turmeric or yellow coloring over the top of the rice. Let the rice simmer over low heat until cooked, fluff it with a fork, then spoon it into a serving dish.
