Chicken couscous is one of the most famous dishes in the Arab Maghreb countries. Here is this delicious and easy method, and most importantly, you won’t need the special pot used to make this recipe.

Ingredients

  • 1 kilogram chicken thighs, a whole chicken, or chicken breasts
  • 400 g pumpkin
  • 4 small potatoes
  • 2 medium carrots
  • 2 large onions
  • 6 garlic cloves
  • 2 green bell peppers
  • 2 tomatoes, diced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon turmeric
  • salt to taste
  • 2 tablespoons tomato paste
  • 1 1/2 cups cooked chickpeas
  • 3 tablespoons chopped fresh cilantro
  • a pinch of finely chopped parsley for garnish
  • 2 cups couscous
  • 1 tablespoon butter
  • 3 tablespoons vegetable oil
  • 3 bay leaves
  • 2 liters water

Method

  1. Cut the potatoes, carrots, pumpkin, and bell peppers into large cubes (zucchini and cabbage can also be added, if desired).
  2. Place the oil over the heat until hot, then add the chicken pieces and stir for only 5 minutes until the pieces are browned on all sides.

  3. Add the onions (cut each onion into 4 equal pieces or quarters), then add the minced garlic and stir.
  4. Add the spices, tomato paste, diced tomatoes, chopped cilantro, and bay leaves, and stir.
  5. Add the water and wait until it boils, then lower the heat and simmer the chicken until it is three-quarters cooked.
  6. After that, add the carrots cut into large cubes, then the potatoes, and let them boil with the chicken over low heat until half cooked.
  7. Then add the bell peppers and pumpkin and let everything boil until all the vegetables are cooked.
  8. Finally, add the pre-cooked chickpeas and let them boil for two more boils, then turn off the heat under the first pot.
  9. In a second pot, add the butter, then add 1 1/2 cups of the broth from cooking the vegetables and chicken for each cup of couscous.
  10. Let it boil for only 2 minutes, then turn off the heat under the pot. Add the couscous grains, cover the pot, and wait until the couscous grains open up and fluff.

  11. Serve the couscous grains alongside the vegetables and boiled chicken, and garnish with chopped parsley.
