Dough ingredients:

1 cup flour

a pinch of salt

1 cup water

1 teaspoon sugar

1 teaspoon yeast

1/2 teaspoon baking soda

3 drops lemon juice

Ingredients

  • 1 teaspoon sugar
  • 1 teaspoon yeast
  • 1/2 teaspoon baking soda
  • 3 drops lemon juice

Method

  1. First, dissolve the yeast and sugar in 2 tablespoons of warm water.
  2. Mix the flour with a pinch of salt and 1 cup of water well.
  3. Once the yeast has doubled in volume, add it to the flour and let the dough rest for about an hour.
  4. Before shaping, add the baking soda with the lemon juice and mix well.
  5. The mixture should be runny, and if needed, you can add a little more water as required by the dough.
  6. Pour the batter in a circular shape into a wide skillet and cook over medium heat for about 2 minutes, until the bubbles start to puff up.
    Timers: 2 min
  7. Lift the qatayef disc and cover it immediately so it does not dry out.
  8. Bake the second loaf or disc that we will use as the top layer.
  9. Stuff the qatayef disc with cheese as desired, place the second disc on top, then put the qatayef loaf in an oven tray and bake until browned and the cheese melts.
  10. When the cheese qatayef loaf comes out of the oven, pour the syrup over it.
