How to make baguette bread or Western-style bread with a tried-and-true homemade recipe!
Ingredients
- 1 kg mixed whole-wheat and white flour
- 1 teaspoon salt
- 1 tablespoon instant yeast
- 1 tablespoon sugar
- 1/2 cup olive oil
- water as needed for the dough
Method
- Start by mixing the white and whole-wheat flours together, then add the salt.
- Gradually add the remaining ingredients — dry ingredients first, then the liquids.
- Knead well until the dough comes together and is uniform.
- Knead the dough well for about 7 minutes by hand (less time if using a stand mixer) to ensure the ingredients are fully combined.Timers: 7 min
- Cover the dough and let it rest for at least 7 hours.Timers: 420 min
- After that time, knead the dough again, work it well, then cover and refrigerate for at least 12 hours.Timers: 720 min
- After the second, gentle proofing, turn the dough out onto a clean flat surface and stretch and fold it, then knead and shape it again.
- Finally, shape the dough into baguette loaves.
- Place the dough rolls or baguette loaves (or any desired shape) on the baking tray.
- It is important to bake baguettes using steam (bain-marie): place a tray with hot or boiling water in the oven so steam rises, and place the baguette tray on a rack above it.
- The oven should be preheated. Bake the baguettes at 180°C for about 25 minutes.Timers: 25 min
