How to Make Apple Jam with Apple Slices
Apple jam can be made smooth or with slices, and it is delicious either way, especially with dried walnuts. Here is the traditional method, resulting in golden, delicious pieces of apple.
Ingredients
Start here, then move straight into the method.
- About 7.5 kilos red apples (after peeling and removing the seeds)
- 3.5 kilos sugar
- 1 medium tablespoon citric acid, also known as lemon salt (or 1 heaping tablespoon)
- 1 large sachet mastic or 3 small ones
- Dried walnuts (from half a kilo to 1 kilo, or حسب الرغبة)- adding walnuts is optional

Method

- Wash the apples and dry them, then peel them and remove the seeds with a knife. Cut them into slices, meaning crescents, in the shape of half-moons (cut the apple in half, clean it from the inside, then cut it lengthwise into medium-thick slices)
- Place the pieces on a scale in a bowl until you have 7.5 kilos of sliced apples
- Soak the apples with the sugar, citric acid, and mastic overnight
- The next day, place the apples in a large pot over the stove or wood fire and leave them over high heat until they boil, stirring and checking every now and then
- After boiling, reduce the heat to medium or a little lower and stir every now and then
- When the apple pieces are almost cooked through, about three-quarters done, lower the heat a lot and leave the jam over very low heat until the apples are fully cooked
- Let the apple jam cool to room temperature, then transfer it to airtight jars
- Put the jam in the refrigerator after opening it if the weather is hot. As long as the jar is sealed, there is no need to refrigerate it
