Ingredients

  • Finely minced meat
  • 1 small onion, finely chopped
  • Black pepper
  • A pinch of cinnamon
  • Salt
  • A pinch of seven spice
  • A pinch of curry spice
  • Vegetables suitable for stuffing, as available

Method

  1. Sauté the onion in a little oil until soft... add the meat and spices and sauté until cooked, then add the pine nuts.
  2. Peel a few small potatoes and hollow them out as you would for zucchini... roast them in the oven or fry them and stuff them with the meat mixture...
  3. Do the same with carrots and zucchini: hollow them out, stuff them, brush with a little oil, and roast them in the oven...
  4. Boil a few frozen or fresh artichokes until tender. Drain them and roast them and stuff them as well.
  5. Hollow out the tomatoes and stuff them; slice the eggplant into slightly thick rounds, grill with a little oil or fry, place the meat on top and cover with tomato slices...
  6. Arrange all the stuffed vegetables in a baking tray and pour over the sauce, which is: water, tomato paste, salt, and spices,
  7. Put the tray of stuffed vegetables in the oven until cooked and serve with cooked rice.
