Method
- Whisk the eggs with the sugar and vanilla until smooth
- Add the butter, flour, and milk
- Whisk all ingredients well
- You should obtain a loose, semi-liquid batter.
- Heat a wide skillet over the stove. Lightly grease with butter or cooking spray, pour a thin circle of batter. Leave a couple of minutes until the bottom browns. Flip the crepe to the other side and brown as well.
- Crepes can be topped with chocolate sauce, honey, or jam. You can also leave crepe circles open or fill them and roll into a cylinder as shown in the accompanying photo.
- Crepes are best served with fresh fruit, especially bananas and strawberries.
