  • 2 cups flour
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon sugar
  • 2 1/2 cups milk
  • 2 tablespoons butter, softened at room temperature

Method

  1. Whisk the eggs with the sugar and vanilla until smooth
  2. Add the butter, flour, and milk
  3. Whisk all ingredients well
  4. You should obtain a loose, semi-liquid batter.
  5. Heat a wide skillet over the stove. Lightly grease with butter or cooking spray, pour a thin circle of batter. Leave a couple of minutes until the bottom browns. Flip the crepe to the other side and brown as well.
  6. Crepes can be topped with chocolate sauce, honey, or jam. You can also leave crepe circles open or fill them and roll into a cylinder as shown in the accompanying photo.
  7. Crepes are best served with fresh fruit, especially bananas and strawberries.
