Ingredients
- Half a kilo boneless chicken breasts, cut into cubes
- Chopped onion
- Minced garlic
- 2 tomatoes, peeled and chopped
- Grated carrot
- Corn
- Bell pepper, cut into strips
- Hot pepper - optional
- Chicken seasoning, fajita seasoning
- Mixed spice
- Ground cinnamon
- Cardamom
- Curry powder
- Salt

Method
- Sauté the onion in a little vegetable oil until just softened, then add the garlic and stir
- Then add the chicken over high heat, stirring constantly
- Add the spices to the chicken and stir until cooked through
- When the chicken is done, start adding the vegetables... first the carrot because it is firm, and stir until it softens, then add the rest of the vegetables, stir, and lower the heat
- Leave the chicken fajitas over low heat until all the ingredients are well cooked
