Homemade Ashta or Qaymar

An easy, tried-and-tested method for making homemade ashta. Ashta, or qaymar as it is called in some Arab countries, is used in many desserts, but it can also be enjoyed on its own with fruit and honey.

Prepare the ashta in two stages. In the first stage, combine the powdered milk with the water and mix well so it dissolves over low heat. Once the milk is warm, add the lemon juice. You can substitute the lemon juice with the same amount of white vinegar or half a teaspoon of citric acid. One of these three ingredients will be enough to curdle the milk and turn it into crumbly pieces called "curd".
