Banana pancakes: In a bowl mash the banana with a fork until smooth, add the egg, vanilla and cinnamon and mix well until combined. Heat a non-stick skillet over medium heat with a light smear of oil or butter, pour about half a cup of batter into the skillet and cook until the bottom turns light brown and bubbles appear on the surface, then flip and finish cooking until done. Repeat until the batter is used up and serve with honey.
