Healthy pancakes... 4 healthy and delicious recipes

Banana Pancakes:

2 bananas

2 eggs

1 teaspoon vanilla

1 teaspoon ground cinnamon

Honey for serving

Banana Pancake Method:

In a bowl mash the bananas with a fork, then add the eggs and whisk with the fork, then add the vanilla and cinnamon and mix.

In a nonstick pan, add a light smear of oil; when hot, pour about 1/2 cup of the pancake batter and wait until the bottom turns golden brown, then flip to the other side.

Repeat until the batter is used up.

Serve drizzled with honey.

Peanut Butter Pancakes:

1/2 cup light milk

1 egg

1 teaspoon peanut butter

1/2 cup whole wheat flour

1/4 teaspoon salt

1 teaspoon baking powder

1/2 cup dark chocolate chips

Peanut Butter Pancake Method:

In a bowl mix milk, egg, and peanut butter and whisk well.

In another bowl combine the dry ingredients — flour, salt, baking powder — then add the wet mixture to the dry ingredients and stir in the chocolate chips until combined.

Cook the same way as the banana pancakes.

Raisin Pancakes:

2/3 cup yogurt

1/2 banana

1/2 cup oats

1/2 teaspoon ground cinnamon

1/2 cup raisins

Raisin Pancake Method:

In a blender put all ingredients except the raisins and blend until you have a thick batter.

Pour about 1 cup of batter into the pan and sprinkle some raisins on top of the pancake, then flip after the bottom is browned.

Avocado Pancakes:

1 banana

1/2 avocado

Avocado Pancake Method:

Put all ingredients in a blender and blend until smooth, then cook the same way as the other pancakes.

Method

  1. Banana pancakes: In a bowl mash the banana with a fork until smooth, add the egg, vanilla and cinnamon and mix well until combined. Heat a non-stick skillet over medium heat with a light smear of oil or butter, pour about half a cup of batter into the skillet and cook until the bottom turns light brown and bubbles appear on the surface, then flip and finish cooking until done. Repeat until the batter is used up and serve with honey.
  2. Peanut butter pancakes: In a bowl whisk together the milk, egg and peanut butter until smooth. In another bowl mix the flour with the salt and baking powder, then add the wet ingredients and stir until the batter is uniform, fold in the chocolate chips gently. Heat a non-stick skillet with a little oil, pour an appropriate amount of batter for each pancake and cook over medium heat until the underside is golden, then flip and finish cooking. Repeat and serve warm.
  3. Raisin pancakes: In a blender put the yogurt, half a banana, the oats, the egg, vanilla and cinnamon and blend until you have a thick, cohesive batter. Heat the skillet and pour a portion of batter into the pan, place some raisins on the surface before it sets completely, wait until the bottom browns then flip and finish cooking. Repeat until the batter is used up and serve the pancakes warm.
  4. Avocado pancakes: In a blender put the banana, half an avocado, the egg and the oats and blend until the batter is smooth and uniform. Heat a non-stick skillet with a touch of oil, pour from the batter and cook the same way as the other pancakes until browned, then flip and finish cooking. Repeat until the batter is finished and serve hot.
