  • 1/2 teaspoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried coriander

  • 4 tablespoons olive oil
  • salt to taste

Method

  1. Wash the potatoes thoroughly to remove any dirt, then cut each potato lengthwise into wedges, leaving the skin on.
  2. Rinse the wedges again and leave them in a colander until all excess water drains away.
  3. Place the potato wedges in a large bowl, add the remaining ingredients, and toss well to coat.
  4. Line a baking sheet with parchment paper and arrange the wedges on it with the skin side down.
  5. Cover the tray with aluminum foil and bake in a preheated oven at 180°C (350°F) for 30 minutes or until tender. Remove the foil and continue baking or broil briefly until the tops are nicely browned.
