- 5 medium potatoes
- 1/2 teaspoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried coriander

- 4 tablespoons olive oil
- salt to taste

Method
- Wash the potatoes thoroughly to remove any dirt, then cut each potato lengthwise into wedges, leaving the skin on.
- Rinse the wedges again and leave them in a colander until all excess water drains away.
- Place the potato wedges in a large bowl, add the remaining ingredients, and toss well to coat.
- Line a baking sheet with parchment paper and arrange the wedges on it with the skin side down.
- Cover the tray with aluminum foil and bake in a preheated oven at 180°C (350°F) for 30 minutes or until tender. Remove the foil and continue baking or broil briefly until the tops are nicely browned.Timers: 30 min
