Cheese halawa in cups, or halawa-al-jibn tiramisu — the same wonderful cheese halawa presented in an inventive way
Ingredients
- 2 cups water
- 3/4 cup sugar
- 1 cup coarse semolina
- 600 g unsalted shredded mozzarella cheese
- a dash of orange blossom water and rose water
- 1 cup ground pistachios
- pre-made sugar syrup (qatr or shireh)
- 1 cup prepared clotted cream (qeshta / qareesha)

Method
- In a saucepan, dissolve the sugar in the water and place it over the heat...
- After boiling, begin adding the coarse semolina in batches...
- Stir well with a wooden spoon, then gradually add the shredded cheese...
- Stir well until you have a very cohesive dough, forming a single mass...
- Add a dash of rose and orange blossom water and stir for two minutes so the semolina absorbs the flavors...
- Pour the hot cheese halawa immediately onto a sheet of parchment paper on a clean surface...
- Put a little sugar syrup on the palm of your hand and stretch/shape the dough with your hands...
- Place another sheet of parchment paper over the halawa and roll it between the parchment sheets using a rolling pin...
- Lift one parchment sheet aside and slice the dough into long, irregular strips...
- Prepare clear cups. Start with a layer of cheese halawa at the bottom of each cup, then a layer of the prepared clotted cream, then a layer of ground pistachios. Repeat — halawa, cream, pistachios — until the cup is filled.
- Garnish the top of each cup with orange blossom jam or extra pistachios...
- Let them cool, then serve with extra sugar syrup (qatr). Eat with a spoon.
