Be careful not to break the delicate mushroom.\r\nRemove the black gills from the mushrooms.\r\nPrepare the filling: fine breadcrumbs or finely ground crackers, minced garlic, and a little chopped parsley. Add a pinch of salt and black pepper. Also add a little grated Parmesan (Parmesan Reggiano). Note: store-bought grated Parmesan is very salty; it’s best to buy a good block of Parmesan and grate it as you use.\r\nPlace the mushrooms on a baking sheet with a drizzle of olive oil.\r\nFill the mushrooms with the filling. Add a little mozzarella cheese.\r\nBake in a preheated oven for about 12 minutes or until the mushrooms are cooked. Ingredients

  • Large Portobello mushrooms
  • 2 cloves garlic, crushed
  • A pinch of salt
  • A pinch of black pepper
  • Parmesan cheese (preferably a whole Reggiano)
  • Mozzarella cheese
  • Fine breadcrumbs (soft roll crumbs)
  • Parsley

Method

  1. Remove the outer skin from the Portobello mushrooms. Be careful not to break the delicate mushroom caps.
  2. Remove the dark gills from the mushrooms.
  3. Prepare the filling: fine breadcrumbs or finely ground soft crumbs, crushed garlic, and a little finely chopped parsley. Add a pinch of salt and a pinch of black pepper. Also add a grating of Reggiano Parmesan. Note that pre-grated Parmesan sold in stores is very salty; it's better to buy a whole piece of good-quality Parmesan and grate it fresh when using.
  4. Place the mushrooms on a baking tray and drizzle with a little olive oil.
  5. Spoon the filling into the mushroom caps. Add a little mozzarella cheese on top.
  6. Bake in a preheated oven for about 12 minutes or until the mushrooms are cooked. Garnish with fresh chopped parsley.
