Charcoal‑grilled fish seasoning with homemade Tartor sauce — simply delicious!

Ingredients

  • Fish suitable for grilling
  • Cherry tomatoes
  • Garlic
  • Fresh hot pepper
  • Fresh cilantro or parsley
  • Fish spice mix
  • Ground cumin
  • Lemon
  • Salt
  • Tartor sauce:
  • 1 tomato, finely chopped
  • a bunch of parsley, finely chopped
  • 1 clove garlic, crushed
  • 2 tablespoons plain yogurt
  • 1 tablespoon tahini
  • a pinch of salt
  • a drizzle of olive oil
  • a squeeze of lemon juice

Method

  1. Wash the fish well with salt and lemon juice, clean the inside, and leave the scales on.
  2. In a deep bowl put small amounts of the ingredients.
  3. Add the tomatoes, garlic, hot pepper, cilantro, fish spices, salt, ground cumin, and lemon juice.
  4. Mix them together until well combined.
  5. The seasoning is then ready for grilling.
  6. You can use this seasoning and method to grill the fish on charcoal, roast it in the oven, or pan‑fry it.
