Grilled Fish Marinade — a guaranteed, delicious recipe
Ingredients
- Fish of any type suitable for grilling
- 3 tablespoons chopped basil
- 3 tablespoons chopped cilantro
- 3 tablespoons chopped parsley
- 3 tablespoons chopped red sweet pepper
- 3 cloves garlic, crushed
- 1 tablespoon lemon zest and the juice of 1 lemon
- 1 tablespoon smoked paprika (ground red pepper)
- 1 teaspoon black pepper
- 1/2 cup butter at room temperature
- 3 tablespoons olive oil
- A pinch of salt
- Vegetables for grilling: potatoes, dry onion, and sweet pepper

Method
- Clean the fish well and make several diagonal slashes on both sides with a sharp knife.
- To make the marinade: in a bowl place the room-temperature butter, then add the finely chopped cilantro, parsley, basil, and red bell pepper.
- Add the spices (paprika and black pepper), a pinch of salt, olive oil, crushed garlic, and the lime and lemon zest and juices.
- Mix everything well until you have a spreadable, flavorful marinade.
- Brush the fish inside and out with the spreadable mixture.
- Place the fish on a baking tray and bake/grill in the oven until cooked through. Be careful not to overcook — you want moist, tender fish, not dry or tough.
- Wash small potatoes well (no need to peel), cut them in half and arrange them in a separate tray with onion pieces and sweet peppers.
- Roast the vegetables in the oven. When they are cooked, brush the tops with the same marinade and return them to the oven for 2 minutes to glaze.Timers: 2 min
- Serve the grilled fish with the roasted vegetables, roasted eggplant, tartar sauce, and hot sauce.
