Green Zaatar Bread
Green zaatar bread — very delicious with fresh zaatar and olives. Besides tasting great, it smells wonderful. Serve it for breakfast or use it to make the best sandwiches for the kids.
Green zaatar bread — very tasty and incredibly fragrant.
Ingredients
Start here, then move straight into the method.
- 1 kg all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 tablespoon instant yeast
- 1/2 tablespoon baking powder
- 3/4 cup olive oil
- Warm water as needed
- Chopped olives
- Fresh green zaatar, washed and well drained

Method
Follow the cooking sequence without leaving the page.
- Mix dry ingredients: flour, sugar, salt, yeast and baking powder. Stir, then add the olive oil and rub it in until well distributed.
- Add the zaatar and olives and mix, then add warm water gradually and knead well — about 10 minutes.Timers: 10 min
- Let the dough rest and rise enough until doubled.
- After rising, shape the dough into medium discs or balls and place them on a nonstick baking tray lightly greased with oil. Cover with plastic wrap.
- Keep them in a warm place for about 3 hours for a second rise.Timers: 180 min
- Bake the green zaatar bread in a preheated oven at moderate heat, or grill them on a griddle or electric grill. You can shape them as flat rounds or as a scored loaf.
- Serve the green zaatar bread at breakfast with dairy, cheeses and eggs, or use it to make sandwiches.
