Fried Ajjeh (Herb Omelette)
Ajjeh is one of the tastiest dishes served at breakfast. Some also like to serve it at lunch as an appetizer alongside fried vegetables like eggplant and cauliflower. Very delicious.

Ingredients
- نصف باقة بقدونس
- بضع عروق نعناع اخضر مورقين
- بصلة يابسة
- بضع عروق من البصل الاخضر- اختياري
- 8 ملاعق كبيرة طحين
- 8 بيض
- القليل من الماء لترخية الخليط اذا كان ثقيلاً جداً
- ملعقة صغيرة ملح او حسب الرغبة
- كمون ناعم
- قرفة ناعمة
- كزبرة يابسة
- ملعقة صغيرة بايكينغ باودر

Method
- Chop the onion, sprinkle salt over it and rub it with your hands
- Add the spices — a pinch of each — plus the chopped parsley and mint and the eggs, then whisk
- Add the flour and baking powder and mix
- If the mixture is heavy, add a little water only and whisk again until it reaches the desired consistency
- Fry the ajjeh over medium heat in plenty of oil..
- You can fry the ajjeh in a small pan with a tablespoon of oil only... Put about one cup or half a cup of the ajjeh batter in the pan and spread it to cover the pan. When it is cooked on the first side, flip it to the other side
