Fried eggplant with za'atar sauce — a new, distinctive sauce to serve with eggplant
Ingredients

- Eggplant
- Flour
- Sauce
- 1 very finely chopped tomato
- 1 very finely chopped onion
- Fresh za'atar or dried za'atar
- Pinch of salt
- Pinch of pepper
- A splash of pomegranate molasses
- A squeeze of lemon juice
- Pinch of oregano

Method
Follow the cooking sequence without leaving the page.
- Peel the eggplant leaving a little skin on it, then slice.
