Ingredients

  • Flour
  • Sauce
  • 1 very finely chopped tomato
  • 1 very finely chopped onion
  • Fresh za'atar or dried za'atar
  • Pinch of salt
  • Pinch of pepper
  • A splash of pomegranate molasses
  • A squeeze of lemon juice
  • Pinch of oregano

Method

Follow the cooking sequence without leaving the page.

  1. Peel the eggplant leaving a little skin on it, then slice.
  2. Season it with a sprinkling of flour to prevent it from absorbing too much oil, then deep-fry in very hot oil until browned, remove and place on paper to absorb excess oil.
  3. Mix all the sauce ingredients well and serve alongside the fried eggplant.
