Method
- Wash the eggplant before cutting
- Cut it into medium-thick rounds
- Place the eggplant slices on kitchen paper and sprinkle salt on both sides
- Leave them for a long time, or at least one hour; you will notice droplets of eggplant liquid on them
- Use kitchen paper to dry the slices
- Fry the eggplant in plenty of hot oil, stirring until it takes the desired brown color and is cooked
- Serve the fried eggplant with mint yogurt
- Mint yogurt method:
- Put the yogurt with fresh mint, a pinch of salt, and a little water in a blender and blend
