Ingredients
- 2 cups freekeh
- 1 cup meat or chicken broth
- 2 dry onions
- roasted chicken
- olive oil
- 1 tablespoon ghee
- nuts, as desired
Method
- Wash the freekeh and soak it for no less than 30 minutes.Timers: 30 min
- Sauté the finely chopped onion in olive oil or vegetable oil until softened.
- Drain the freekeh and add it to the onions; stir until the freekeh absorbs the oil and mixes with the sautéed onions.
- Add chicken or meat stock.
- When the broth boils, reduce the heat, cover the pot, and let the freekeh simmer on low heat until cooked.
- If some freekeh kernels remain hard after the water is absorbed, add small amounts of hot water in batches: sprinkle a little water, cover the pot, and leave it on low heat until the freekeh kernels swell and cook through.
- One minute before turning off the heat, add the ghee (clarified butter) and stir.
- Pour the freekeh into the serving dish, arrange the boiled or roasted chicken on top, then garnish with fried or toasted nuts.
