Here is how to make white beans with chicken, with a taste that is just as delicious as meat.
Ingredients
- 1/2 kilo small white beans
- 1 tablespoon baking soda
- 1 kilo chicken thighs or drumsticks, as desired
- A bunch of cilantro
- 1 head garlic
- A pinch of seven-spice
- A pinch of black pepper
- A pinch of chicken seasoning
- Salt
- Oil or ghee for cooking
- Crushed tomatoes
- Tomato paste
- Seasonings for boiling the chicken
- Rice:
- 2 cups vermicelli
- 2 cups rice
Method
- Soak the beans overnight with 1/2 tablespoon baking soda.
- The next day, wash the beans and boil them with another 1/2 tablespoon of baking soda.
- Boil the chicken in a separate pot with the seasonings.
- Remove the bones from the chicken and shred it into medium pieces.
- Crush the garlic and finely chop the cilantro.
- In a pot, sauté the garlic and cilantro in a little oil or ghee.
- When the garlic and cilantro wilt, add the chicken with the spices and stir briefly. Then add the beans, drained from their cooking water, the crushed tomatoes, if using, and the tomato paste, and cover everything with the chicken broth. Add salt.
- Let the pot of beans with chicken simmer over low heat until the sauce thickens.
- Meanwhile, prepare the rice: fry the vermicelli in oil or ghee, then add the rice and stir.
- Add 2 cups of water for every 1 cup of rice, add salt, stir, and let it come to a boil.
- After boiling, reduce the heat, cover the rice, and let it cook gently for about 20 minutes.Timers: 20 min
