Fajitas are a wonderful, rich, and easy Mexican dish. Here is a special way to serve them as rolls made with delicious samoon dough.
Ingredients
- 1/2 kilo chicken breast/chicken strips
- 1 can mushrooms
- 1 can corn
- 1 large onion
- 1 green bell pepper
- 2 grated carrots
- 1 tablespoon mustard
- 1 tablespoon soy sauce
- 1 tablespoon yogurt
- 1 tablespoon tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons fajita seasoning
- 1/4 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- Samoon Dough:
- 1 kilo flour
- 2 tablespoons sugar
- 1 tablespoon yeast
- A pinch of salt
- About 3 cups warm milk (or as needed)
- Or an amount of powdered milk dissolved in the same amount of warm water
- 1/4 cup oil
- 1 egg
- 2 tablespoons butter
- For brushing the dough before baking:
- Ketchup
- Mayonnaise
- Grated cheese (such as mozzarella)
- The samoon:
- We start by preparing the dough. Mix the dry ingredients, then add the oil and rub it into the dry ingredients a little before adding the egg and mixing well.
- Knead with warm milk until the dough becomes soft.
- Finally, add the butter and knead again until the dough is smooth.
- Cover the dough for 1 hour, or until it has risen well.
- The fajita filling:
Method
- Cut the onion and pepper into strips. Put a very small amount of oil in a nonstick pan and saute the onion strips briefly only. Before they are fully cooked, add the green pepper, then the chopped carrot, and stir.
- When the vegetables soften slightly, add the corn and mushrooms and stir for a minute before adding the chicken cut into cubes (you can also place the chicken cubes in a pot of water over the heat until it boils, then wash the chicken after its color changes from boiling and drain it before adding it to the pan; this step is optional).
- Add all the remaining ingredients, including the spices, yogurt, and soy sauce, and stir. Leave the fajita over medium heat for about 20 minutes, stirring occasionally, until the ingredients are cooked.Timers: 20 min
- When the dough has risen and the filling has cooled, start assembling.
- Divide the dough into two parts. Roll out the first part to get one large, thin loaf.
- Spread it with mayonnaise and ketchup, sprinkle grated cheese over it, then spread some of the fajita mixture over it and roll it up into a log.
- Cut the large, long roll into pieces of the desired size.
- Arrange the rolls in a baking tray, leaving space between them because they will expand more.
- Let them rest for another hour, or until the dough rises and doubles in size.
- Of course, prepare the second portion of dough in the same way. Finally, place the trays in a hot oven heated from both top and bottom at 200°C.
- Bake the fajita rolls for 20 to 25 minutes, or until cooked through and golden.Timers: 25 min
