Eggplant mutabbal with a special twist... this dip is already so delicious and is also called baba ghanoush! We are making it even richer and more indulgent with a little meat and nuts on top :)
Ingredients
- 1 kilo eggplant, grilled over a gas flame
- 2 cloves garlic, crushed
- 2 tablespoons tahini
- 2 tablespoons yogurt
- Salt, to taste
- 1/4 teaspoon citric acid
- Note: Lemon juice can be used, but citric acid helps keep the mutabbal white in color
- The meat:
- 1/4 cup vegetable oil
- 300 grams finely minced meat
- 1 onion, finely chopped
- 1/2 green sweet pepper, diced
- 1/2 red sweet pepper, diced
- 1 tomato, diced
- 1 teaspoon tomato paste
- 1/2 teaspoon seven-spice blend
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Fried nuts, as desired
- Olive oil for topping
Method
- Grill the eggplants over the gas flame, turning them on all sides until cooked through
- Slice each eggplant lengthwise with a knife
- Use a spoon to scoop out the flesh into a bowl and let it cool
- Mash the eggplant until smooth using a garlic pestle
- Add the crushed garlic, tahini, yogurt, salt, and citric acid, then mix well
- In a pan, heat the oil and cook the meat with the salt until it changes color
- Add the chopped onion and cook until softened, then add the diced sweet pepper and cook for 2 minutes. After that, add the diced tomato, tomato paste, and spices and stirTimers: 2 min
- Leave the meat filling over low heat, stirring occasionally, until cooked through
- Spread the mutabbal on a serving platter, then top with the meat filling and fried nuts, and drizzle with olive oil
- Serve the mutabbal with Arabic bread or saj bread
