Ingredients

  • 7 tablespoons coarse semolina
  • 14 tablespoons powdered milk
  • 6 cups water
  • 1 teaspoon butter
  • 1 coffee cup sugar
  • 1 teaspoon rose water
  • finely ground biscuits (crushed cookies)
  • sugar syrup (qatir or shira) for serving

Method

  1. Dissolve the semolina, powdered milk, and sugar in the water.
  2. Place the mixture in a pot over medium heat and stir until it boils.
  3. Add the butter and stir.
  4. Let the semolina dessert simmer on low heat for only five minutes after boiling.
  5. Add 1 teaspoon rose water, stir, then remove the pot from the heat.
  6. Pour the semolina mixture into a large oven-safe glass dish or a baking tray and spread the crushed biscuits over the surface.
  7. Put the glass dish or tray into the oven to brown the surface, i.e., the biscuit topping.
  8. Let it cool, then refrigerate it for at least two hours before serving.
  9. Drizzle sugar syrup (qatir or shira) over it when serving.
