Easy Coconut Cookies
For coconut lovers... here is the method to make these incredibly easy coconut cookies. Make them and enjoy their delicious taste and light, crumbly texture... and you’ll be asking for more :)
The delicious coconut cookies for all coconut lovers.. this recipe doesn’t need much plating.. the picture says it all!!
Ingredients
Start here, then move straight into the method.
- 2 egg whites
- a pinch of vanilla
- 1/2 cup sugar
- 1 tablespoon flour
- 1 3/4 cups shredded coconut
- Apricot jam for decoration
Method
Follow the cooking sequence without leaving the page.
- Start preparing the coconut discs dough by whipping the egg whites with a pinch of vanilla for about 3 minutes.Timers: 3 min
- Add the sugar and whip so the sugar dissolves well; we don't want grainy sugar affecting the texture and taste of the coconut discs.
- Add the grated coconut and fold the mixture with a spoon.
- Add the flour and stir with a spoon as well.
- The coconut disc dough should become soft and cohesive.
- Shape the dough into rounds or discs and arrange them on parchment paper on a tray.
- Make a small indentation in the center of each disc with a very small spoon or your finger.
- Place the tray in a hot oven at 180°C and bake for only ten minutes until the discs are golden.
- When cooled, decorate the coconut discs with apricot jam and serve.
