Ingredients

  • 1 and 3/4 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 eggs, at room temperature
  • 2 medium bananas
  • 1/2 cup vegetable oil
  • 1/4 cup milk + 1 tablespoon
  • 1 tablespoon vinegar
  • 1 tablespoon vanilla
  • 1 cup chopped walnuts (optional)
  • 1 tablespoon flour for the walnuts

Method

  1. In a small jug, combine the milk and vinegar, stir well, and set aside.
  2. Place the chopped walnuts in a bowl, sprinkle with the tablespoon of flour, toss to coat, and set aside.
  3. In a large bowl, mix together the flour, sugar, baking soda, salt, and cinnamon until well combined.
  4. In another bowl, place the bananas and mash them with a fork.
  5. Add the eggs and stir, then using a wooden spoon add the oil and milk mixture and mix well.
  6. Finally, add the dry ingredients and mix well until combined.
  7. Add the chopped walnuts and stir. Pour the banana cake batter into a greased rectangular pan.
  8. Bake the banana cake in a preheated oven at 160°C for about 1 hour and 15 minutes to 1 hour and 30 minutes, depending on the strength of your oven.

  9. You can check if the banana cake is done with a toothpick. Let it cool completely before removing it from the pan and slicing it.
