Ingredients
- 1 and 3/4 cups flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 eggs, at room temperature
- 2 medium bananas
- 1/2 cup vegetable oil
- 1/4 cup milk + 1 tablespoon
- 1 tablespoon vinegar
- 1 tablespoon vanilla
- 1 cup chopped walnuts (optional)
- 1 tablespoon flour for the walnuts

Method
- In a small jug, combine the milk and vinegar, stir well, and set aside.
- Place the chopped walnuts in a bowl, sprinkle with the tablespoon of flour, toss to coat, and set aside.
- In a large bowl, mix together the flour, sugar, baking soda, salt, and cinnamon until well combined.
- In another bowl, place the bananas and mash them with a fork.
- Add the eggs and stir, then using a wooden spoon add the oil and milk mixture and mix well.
- Finally, add the dry ingredients and mix well until combined.
- Add the chopped walnuts and stir. Pour the banana cake batter into a greased rectangular pan.
- Bake the banana cake in a preheated oven at 160°C for about 1 hour and 15 minutes to 1 hour and 30 minutes, depending on the strength of your oven.Timers: 60 min, 15 min, 30 min
- You can check if the banana cake is done with a toothpick. Let it cool completely before removing it from the pan and slicing it.
