The easiest homemade sablé cookies
Ingredients
- 2 cups all-purpose flour
- 3/4 cup powdered (confectioners') sugar
- Pinch of salt
- 1/2 cup butter (soft)
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1 whole egg + 1 egg yolk
- Melted chocolate and jam for filling and decorating
- Note:
- The number of solid (whole) cookies should match the number of hollow (dipped) cookies and they should be the same shape so you can sandwich them together.

Method
- Mix the dry ingredients, then add room-temperature soft butter and rub it in with your fingertips.
- Add one whole egg and the second egg's yolk (without the white).
- Knead lightly without overworking the dough.
- Form the dough into a large ball and refrigerate it for only half an hour.
- After the time has passed, roll out the easiest sablé dough with a rolling pin, dusting with flour, to about 1 cm thickness.
- Cut them with cookie cutters as desired.
- Place the sablé cookies on a baking sheet lined with parchment and put them into a preheated oven.
- When the oven is well heated after two minutes, reduce the temperature to the lowest setting so the sablé won't burn from excessive heat before it cooks through.
- When the cookies are browned on the bottom, turn on the top heat briefly so they develop a light color on top.
- Allow the sablé to cool completely at room temperature before filling and decorating.
