The easiest homemade sablé cookies

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup powdered (confectioners') sugar
  • Pinch of salt
  • 1/2 cup butter (soft)
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1 whole egg + 1 egg yolk
  • Melted chocolate and jam for filling and decorating
  • Note:
  • The number of solid (whole) cookies should match the number of hollow (dipped) cookies and they should be the same shape so you can sandwich them together.

Method

  1. Mix the dry ingredients, then add room-temperature soft butter and rub it in with your fingertips.
  2. Add one whole egg and the second egg's yolk (without the white).
  3. Knead lightly without overworking the dough.
  4. Form the dough into a large ball and refrigerate it for only half an hour.
  5. After the time has passed, roll out the easiest sablé dough with a rolling pin, dusting with flour, to about 1 cm thickness.
  6. Cut them with cookie cutters as desired.
  7. Place the sablé cookies on a baking sheet lined with parchment and put them into a preheated oven.
  8. When the oven is well heated after two minutes, reduce the temperature to the lowest setting so the sablé won't burn from excessive heat before it cooks through.
  9. When the cookies are browned on the bottom, turn on the top heat briefly so they develop a light color on top.
  10. Allow the sablé to cool completely at room temperature before filling and decorating.
